●シャトー・フォンテストー1978年
ポイヤックに近いサン・ソヴァールの小さな町にある
クリュブルジョワ級のシャトー。Fontaines d'Eau＝泉が名の由来です。
長い歴史を持ち、石灰岩土壌の畑から伝統的な方法で
長期熟成に耐えるワインを生み出しています。
カベルネとメルローの比率はミレジムによって異なります。
1978年は1970年代の最優良の1つなので、カベルネ比が高く、
長期熟成向きとなり、時を経る事で渋味や酸味のバランスが良くなります。
40歳を超えるとワインも人間と一緒でミドルエイジ。
強さだけで勝負する若者よりも、熟成した複雑さが魅力でしょう。
最近、コルク打ち替えの際に若いワインが足された古酒が増えましたが
本作は勿論「ノンリコルク」＝本物の古酒です。
ただ、全く足されていない本物には徹底した管理が求められます。
船便を使うと一ヶ月以上も揺られて劣化しやすいため、
当店では(コストを掛けて)航空便を使いイタリアから直輸入しました。

Our flagship, this wine is simply the expression of the best terroir of Fontesteau can offer.
Each year the grapes picked at optimum ripeness give us cuvées with different characteristic tastes. The plots are vinified individually so that each vat represents its own specificity when proposed at the blend tasting that takes place in the January following the harvest.
No vintage is ever the same as another. The magic of blending confers a unique style to each : The Cabernet Sauvignon is always the dominant varietyin the Château Fontesteau blend, a deep and elegant wine.
Three-quarters of the blend is aged for 12 months in barrels (25% new) for a fine-tuning of the tannins.
A quarter of the total volume stays in vat to ensure a certain freshness and conserve the pleasant fruitiness before the bottling is carried out from may.
〜 Chateau History 〜
The discovery of a large deposit of foundry residue near the lake is proof
that Fontesteau was an important centre of activity during the Iron Age.
The proximity of the Bernet tumulus and the roman villa of Villambis links
Fontesteau to this area known to have been inhabited for many centuries.
In this area, a little winding brook called the Jalle du Bernet is
fed by 7 springs (FONT in old French) : hence the name Fontesteau.
1277 : construction of the Château itself ( see “le Feret et ses vins”)
The salamander carved over the dungeon door is thought to be a sign that
King Francis the First visited the castle.
The scallop shell decorations remind us that the pilgrims walking
the Saint James Path passed through on their way to Santiago de Compostela.
During the French Revolution, Fontesteau is known to
have sheltered an “irascible man” who hid his arms in the castle.
